Ingredients:

  • 1kg raw prawns, peeled
  • 125g unsalted butter
  • 2 cloves garlic, finely chopped
  • Juice of 1/2 a lemon
  • A small handful of parsley leaves, finely chopped
  • Salt and freshly ground black pepper to taste

Butter Sauce:

  • 100g unsalted butter
  • Juice of 1/2 a lemon
  • 1 teaspoon Tabasco sauce (or other hot sauce)
  • Salt and freshly ground black pepper to taste Instructions:

  • To make the butter sauce, melt the butter in a small saucepan over low heat. Stir in the lemon juice and Tabasco sauce, and season to taste with salt and pepper. Set aside until ready to use.

  • Preheat your grill, or heat a large frying pan over medium–high heat.

  • Thread the prawns onto skewers (if using wooden skewers, soak them in water for 30 minutes first), or place them in the frying pan. Grill or fry the prawns for 3–4 minutes each side until cooked through.

  • Serve the prawns skewers or fried prawns with the butter sauce drizzled over them, garnished with a little parsley if desired. Enjoy!
