A delicious and healthy way to enjoy seafood!

If you're looking for a delicious and healthy way to enjoy seafood, check out this recipe for cioppino. This seafood stew is loaded with fresh and healthy ingredients, making it the perfect meal for any occasion!

Cioppino is a classic Italian-American seafood stew that's typically made with fresh fish, clams, shrimp, and mussels. The great thing about cioppino is that you can use any type of seafood you like – so it's perfect for those who are looking to mix things up a bit.

In addition to being delicious and healthy, cioppino is also incredibly easy to make. All you need is a pot or Dutch oven to cook the stew in, and it only takes about 30 minutes from start to finish. So if you're looking for a quick and easy weeknight meal, cioppino is definitely worth checking out!

Here's what you'll need to make cioppino:

6-8 cups of seafood stock or clam juice 1/2 cup of white wine 1/2 onion, chopped 1 carrot, peeled and chopped 1 celery stalk, chopped 1 rosemary sprig 1 thyme sprig 3 cloves of garlic, minced 1 bay leaf 1/2 teaspoon of black pepper 1 (15 oz) can of diced tomatoes 1/4 cup of finely chopped fresh parsley leaves 1/4 cup of finely chopped fresh basil leaves 2 tablespoons of extra-virgin olive oil† 1 1/2 pounds of mixed seafood (such as cod, haddock, salmon, shrimp, scallops, and clams), cleaned and scaled‡ salt to taste (optional) lime wedges for garnish (optional)**

If you are using store-bought seafood stock or clam juice, make sure that it does not contain any added MSG or artificial flavors. If you do not have any white wine on hand, you can substitute chicken broth or water instead. You can use either canned diced tomatoes with their juices or diced tomatoes packed in tomato sauce. You can substitute any fresh herbs that you like in this recipe – such as thyme leaves instead of rosemary and basil leaves instead of parsley. ***If desired, serve the cioppino with saltine crackers or crusty bread on the side. And for an extra bit of color and flavor, garnish each bowl with lime wedges before serving.
